Paleo Breaded Chicken Tenders



I made these scrumptious tenders with Right Rice and roasted broccoli, brussels, and cauliflower.

This recipe is:

  • WHOLE30-friendly


  • 1/2 cup Crushed Sea Salt Simple Mills Crackers
  • 2/3 cup Coconut Flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 2 tsp Trader Joes Chili Lime Salt
  • 1/2 tsp coriander
  • 1/4 tsp onion powder
  • 1 egg
  • 1 lb organic chicken tenders


  1. Pre-heat oven to 400 degrees
  2. Place parchment paper on sheet pan and spray generously with coconut oil spray
  3. Combine all dry ingredients (up to the egg listed above) in a medium-sized bowl
  4. Crack and scramble egg in another medium-sized bowl
  5. Use one hand for wet – dip one tender in egg
  6. Use other hand for dry – dip same tender in dry mixture – coat generously
  7. Repeat process for all tenders and spread evenly on cookie sheet
  8. Cook in oven until internal temp reaches 165 degrees (about 12 minutes)
